Zucchini Oat Brownies

Recipe

Thank you to Lillie Eats & Tells for this delicious recipe! It has become a staple for some of our coaches. This simple sweet recipe can all be mixed and spread in the pan so there is minimal clean-up! These are also delicious with a little cool whip and some berries on top!

Ingredients

  • 2 yellow squash or zucchini - blended, finely grated, or riced
  • 1 cup liquid egg whites
  • 1-1/3 cup old fashioned oats
  • 1/4 cup milk of choice
  • 2 scoop chocolate protein powder
  • 1 TBSP honey
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 2 TBSP of chocolate chips
  • Pinch of salt

Directions

  1. Pre-heat oven to 350 degrees
  2. Combine all ingredients (minus chocolate chips) and spread into a parchment paper or lightly greased 8x8 pan.
  3. Sprinkle chocolate chips on top
  4. Bake for 35-40 minutes
  5. Cut into 8 pieces

Protein: 12 grams

Fiber: 3.5 grams
