Easy Shrimp Ceviche

This easy to make, high protein recipe is great for a tailgate, party, or weekday meal. It is packed with nutrients and flavor and is great for the warmer months of the year.


  • 1 pound of cooked shrimp - peeled, deveined, and diced
  • 6 limes, juiced
  • 1 lemon, juiced
  • 1 red onion, diced
  • 1 cucumber, peeled and diced
  • 2 avocados, diced
  • 3 roma tomatoes, diced
  • 1/2 bunch cilantro, chopped
  • 1 jalapeno, finely diced
  • salt & pepper, to taste


  1. Combine juice of limes and lemon with shrimp. Cover bowl and marinate in the fridge for at least 20 minutes.
  2. Add other chopped veggies and mix to combine.
  3. Serve with tortilla chips, plantain chips, jicama chips, or lettuce wraps.
